I’m always looking for new EASY recipes for my son (17 months old) and this ended up being a quick, easy snack for him that he loved. I actually use kale a lot for these green smoothies that I make him that I’ll post soon. I had some leftover kale that was still good, but had purchased more today so I wanted to use up the leftover stuff first. I decided to bake it into a healthy version of chips for him, something I’ve been meaning to try from seeing it on my trusty little friend Pinterest. I have to admit, I wasn’t sure if he’d be into it…
I simply ripped the kale into bite sized pieces, drizzled it with olive oil or the oil of your choice, sprinkle some salt and baked on 350 for 15 minutes. Bake it on foil or parchment paper to avoid it from sticking to the pan. Once you pull it out of the oven, sprinkle with some Parmesan cheese and serve them once they’ve cooled. My son surprisingly devoured them. I plan on making more today for him to snack on. Kale is a superfood with many health benefits so I’m really pleased that my son loves it.
