It’s been a while since I’ve posted but I’m really determined to get back into blogging. I hope you enjoy this recipe. If you know me you know that I love to save some money. The orzo pasta recipe is inspired by a side that I saw at whole foods, I took a picture of the “ingredients” in their dish that they had and then used what I had at home to make something similar. Honestly I had 90% of the ingredients anyway, so it really saves you a ton of money if you make it yourself instead of buying the expensive sides that they charge an arm and leg for per pound. The dressing is a simple homemade recipe that my grandma always had in her fridge.
Greek Orzo Salad:
6 oz Orzo
1 cup grape tomatoes halved
1/2 cup feta cheese
1/4 cup pitted kalamata olives
1/4 cup chopped parsley
1/4 cup red onion
2 tablespoons sun-dried tomatoes
1tsp sea salt
Cook orzo pasta as directed on box, mix everything else in together once it’s all chopped up and serve.
1/4 cup lemon juice (squeeze and strain)
1 tsp dried oregano
1 clove garlic
1/2 tsp kosher salt
1/4 tsp pepper
1/2 cup extra virgin olive oil
Mix it all together and pour all over the above salad once the salad is cooled. This is a recipe that my grandmother always made and had in a mason jar in her fridge growing up. Sometimes she would add feta directly to the dressing if she knew she was going to use it right away.
2 boneless chicken breast (1 for my husband and 1 for my son and I to share)
3 cloves of garlic smashed with the side of a knife
1 tablespoon rosemary
1 tablespoon salt and pepper
4 tablespoons extra virgin olive oil
1/4 red wine vinegar
1 tablespoon sugar
1/2 lemon squeezed lightly over chicken
Cook chicken in oven for 60 minutes at 350F.
All I had to buy at the grocery store for these two recipes was the chicken, feta cheese and sun-dried tomatoes. Everything else I had so it felt very inexpensive to make. I also chopped up some extra tomatoes and cucumber as a little extra side dish, Greyson loves fresh vegetables! There’s enough orzo pasta for leftovers for lunch tomorrow as well. The orzo pasta is a great dish to bring to a party as it’s a cold pasta that can easily be pre-made the night before.
